Nowadays BURRATA is probably the most typical fresh cheese in the market.
Its name means “Buttery” and iti gives an ideas of the creamy taste of this delicious gourmadise.
It was created in Apulia, south of Italy, around the area of Murge, which includes Putignano, Andria, Gioia del Colle, where the masters “Casari” (cheesemakers) created it about 100 years ago.
Burrata in made from cow or buffalo milk. The outside thin shell is made of stretched curd, while the inside is filled with fresh cream and mozzarella strings.
Its process is almost entirely handmade, so each time you are eating Apulian Burrata you can be sure you are tasting a real artisan cheese!
It can be served with salads, with pasta dishes, on pizzas and with a whole variety of combinations: with rucula, onion, pesto sauce, dried tomatoes, cured ham, balsamic vinegar, on crusty bread and so on.
Today most of the best restaurants have introduced Burrata in their menus.
